Yummy.....

I seem to say that a lot, don't I?


The youth worker in our church district and I were talking the other day. Her and her husband want to start eating healthier - not eating convenience foods, planting a garden etc.

Sound familiar?

She called me at work this morning (she works from home most the time but comes into the office once or twice a week) - all excited because she found her great-grandmother-in-law's recipe book stuffed in a box - with lots of good sounding recipies handwritten in it. And it had a recipe for homemade waffles in it, which they tried last night and loved. So of course, I had to try them:



Homemade waffles:

  • 1 3/4 cup flour
  • 2 tsp. baking powder
  • 3 tsp. sugar
  • 1/2 tsp. salt
  • 3 egg yolks, beaten
  • 1/3 cup vegetable oil
  • 1 1/2 cup milk
  • 3 egg whites beat stiff
  • 1 tsp. vanilla

Measure dry ingredients into mixing bowl. Combine egg yolks and milk. Stir into dry ingredients. Stir in cooking oil and vanilla. Carefully fold in egg whites - do not overmix. Pour 2/3 cup or more batter onto preheated griddle. Close and bake.


Oh. My. Gosh.



You know they are good when Tyler eats 2 waffles pieces (my griddle makes 4 triangle shaped pieces), 2 scrambled eggs and a sausage patty for dinner. We won't talk about how much the rest of us ate:)


Yes, 2 different plates of food - if I take a picture of 1 kids food, I have to take a picture of the other kids food.


The good news - I have a few waffles to freeze to pop into the toaster for breakfasts this week. Supposedly they work very, very well this way.

The bad news - I really need to get another mixing bowl for my Kitchen Aid mixer.


1 bowl for my mixer just isn't cutting it anymore....


And she is bringing this wonderful recipe book into work so I can copy some of the recipes. I can't wait........

I just love, breakfast food for dinner, we love making waffles & I love freezing them too. Have you ever made Belgain waffles? If you'd like the recipe just give me a shout and I'd be happy to share it with you.

Ooo!! Another waffle recipe. We're still looking for the 'perfect' recipe. I'll give this one a try. We do the waffles in the freezer for morning breakfasts during the week. One word of advice- with homemade waffles sometimes you have to push them down twice- for some reason they don't seem to heat as quickly as the store bought ones. Probably because they're full of healthy goodness!

I love homemade waffles. I have a really good recipe I use also.
I love to put whip cream and strawberries on my waffle. Yummy is for sure the right word.

Oh, man, Kris! Hand written recipes from a great gandmother-in-law? You know it's good home cooking, total comfort food, with the ingredients we should all have on hand. Awesome! This is exactly what you've been looking for! As we like to say here in this little household, "It do not get any better then that!"

The waffles look delicious...success on your new endeavor which we all share!

P.S., Inspired by you, I went to Costco yesterday, got some chicken breasts, ground turkey and pork loin (can you believe a pork tenderloin is much cheaper then ground beef?) in quantity for the freezer. We can't do a lot of bulk items because some foods would get stale as there's only two of us (and I'd never get through 1 gallon of...ketchup?), but meat is perfect. And I've ideas already for different meals. Blogland is sooo good for sharing and coming together. Thanks!

Yummy is right! My son bought me a waffle maker a few years ago (I think he had maybe his own stomach in mind ~smile~) They are so good and I must admit though I made a huge mistake in my healthy eating by putting berries and whipped cream on it one Sunday morning...oh and you just can't go back to plain ones after that, can you? lol! Heather

Breakfast for dinner! It's a favorite around our farmette too. After making waffles and pancakes from scratch, I'll never go back! It's frugal and delicious!

I'm so glad you've been having such a great time with your new forays into healthy/diy food. We do this too, make a big batch of homemade waffles and then freeze them for later use. We also make an all-purpose mix (a homemade bisquick if you will) that we got from Mother Earth News and keep it on hand for quick pancakes, waffles and biscuits. It's a really great feeling isn't it.....until you start looking at the stack of dishes you're ALWAYS creating!! lol

It's hard to beat homemade anything from anyone's old recipes! Excellent find and thanks for sharing!

You'll definitely need more room in the freezer for all of those!
