Pork and Saurkraut

Some of you may remember when I first tried making my own saurkraut. We opened our first jar over the weekend.

Oh. My. Gosh.

I have never liked saurkraut (that you buy in the store) at all. In fact, I wouldn't eat the pork that was cooked in the saurkraut. That all changed Saturday night. In fact, I should have opened 2 jars, as the kids could not get enough of it.

And to think, if I am being honest here, the only reason I made it was because our Amish neighbor gave me 7 heads of cabbage for 50 cents a piece, and I couldn't stand to see them go to waste. Guess that will teach me.

And since we had a surplus of eggs - I had to hard boil about 3 dozen eggs. At least the kids think a hard boiled egg is a good snack. Tonight I'm making beet eggs out of the rest.....

Kris

PS - as for the piggies. We have corn that we grew - so I think we are just buying the rest of the ingredients for the feed and are going to mix our own feed. But - they will only need about 6 weeks of finishing so it might be easier to just buy feed. And there is only 2 pigs coming - which shouldn't be too bad.

You will have to share how to make your saurkraut. I have made it before but been a while. You sound like you have a great plan.

I am interested in the recipe, too! It sounds really good, and I like the saurkraut you buy at the store so this should be even better!

I have never tried saurkraut and I never thought that one could make it themselves. Good for you. You Should give the recipe and maybe just maybe I could try making some.
Usually homemade stuff is better than the store boughten.
Enjoy that saurkraut.

I've never had souerkraut. But that was a great way to use up the cabbage. You are so resourceful. Your bright blocks are looking fabulous!

I agree that it must be really good if the kids like it! That's awesome! And look at all those eggs! They look really good.

Do you have to give pigs feed? When I lived in the country I knew people who fed their pigs table scraps. Is that not a good thing to do? We only lived in the country for 4 years, so I have no idea how to properly care for farm animals. The people in our town used to laugh at us because we had no idea about country living and would ask the dumbest questions.

I'm big on cabbage now as it's the cheapest vegetable on sale at the grocery store. I like the Savoy cabbage...but not at $1 a pound more! Today...cabbage, pinto beans and a little bacon for flavor. YUM!

Have a great day!

I am very interested to hear more about your chickens. We run a mission here in Southeastern KY. It is basically a home for women off the streets. We garden and can many of our foods. I am soooo interested in doing a chicken coop. I would love to have our own eggs and possible have chickens to eat. I noticed it look like your chicken house floor was concrete. Is that true. Any info you could give or any books you could suggest would be greatly appreciated. Thanks
